Yummy Cupcakes

So it was my girlfriend’s B-day last Saturday and she calls us (the family and I) up last minute and asks us to come for dinner.  I of course say yes and what can I bring?  She’s like well I don’t know.  So I said I will bring dessert.   I had come across this awesome looking cupcake recipe that’s supposed to be comparable to  the Sprinkles Comp. cupcakes in LA.   So I thought now I have a reason to make them.

I used some sweetened coconut, jimmies, chocolate cookie crumbs and some sugar cane sugar for the toppings. Are they not pretty or what…  They were so yummy that my son had 3 and I had an extra one when we got home.  Not good for the butt.  Here is the recipe I followed but you can also find it over at Tatertotsandjello.blogspot.com

2C. sifted cake flour
2tsp. baking powder
1/4tsp. salt
2/3C. milk
3/4tsp. pure vanilla
3/4tsp. coconut extract
1 1/2 sticks unsalted butter
1 1/3C. sugar
2 lg. egg whites
1 egg
Whisk together the flour, baking powder and salt.  In measuring cup, mix the milk and extracts together.  Cream the butter and sugar until fluffy.  Add egg whites and egg.  Add 1/2 of the flour mix.  Drizzle in all the milk and extract. Add remaining dry mix until combined.  Fill cupcake liners and bake 20 min. @350 degrees.

Frosting:  8 oz. cream cheese, 8tbsp. butter, 1/8 tsp. salt and 3 3/4C. powdered sugar, 1/2tsp. vanilla, 1/2tsp. coconut extract.  Mix cream cheese, butter and salt.  Slowly add powdered sugar and extracts.  Frost cooled cupcakes and top with desired toppings.  

They were a big hit.

Now that’s love! 🙂 I can’t stand how cute Ashley looks in her tutu (if I had a girl, I’d be bingegg Lauren to make my kid one). SO CUTE! Looks like she got a ton of gifts and had so much fun!
