Best Sweet Potato Casserole Ever


I can’t remember when and where my mom found this recipe, but she made it one year for Thanksgiving and we were all hooked.  This is the one dish everyone looks forward to.  Not the turkey or the pies it’s the sweet potato casserole.


Sweet Potato Casserole

4cups or 2lg. cans of sweet potatoes mashed
2 cups sugar
2 eggs beaten
3/4 cup melted butter
1 cup evaporated milk
1tsp. nutmeg
1tsp. cinnamon
2 cups marshmallow’s (small ones)
1 cup sweetened coconut flakes

Butter the bottom of your casserole dish and set aside.  Mash your potatoes, add sugar, eggs, melted butter, evap. milk, spices, marshmallows, and coconut.  Bake in 400 degree oven for 20 minutes.  Meanwhile mix together your topping mix.

Topping Mix:

1 1/2 cups cornflakes
1/2 cup brown sugar
3/4 cup butter melted

After casserole has baked for 20 min. add topping and bake for another 10 minutes until it is golden brown and bubbly.   Let it stand for 10 minutes then serve.
 It is delicious!
