Blueberry Citrus Salad

I absolutely love this salad.  This is my favorite salad ever.  I could literally eat this salad everyday it’s so good.
I originally found this recipe in a Taste of Home magazine.  I have since made a few alterations to the salad that I think make it even more appetizing.
What you need:

2cups blueberries
1medium red apple, chopped
1 lg. orange, peeled and chopped
1/2 c. finely chopped red onion
1 tbsp. chopped cilantro
1/4 c. red wine vinegar
3 tbsp. apple or orange juice
2 tbsp. sugar
2 tbsp. olive oil
1/4 tsp. salt
1 package of spring mix salad
2 c. baby spinach leaves
1/2 c. crumbled blue cheese
1/3 c. sunflower seeds
1/4 c. chopped bacon
hard boiled egg sliced to place on the side

1. In lg. bowl mix the blueberries, apple, orange, onion and cilantro.
2. In sm. bowl mix vinegar, apple or orange juice, sugar, oil and salt;  drizzle over fruit mix.  Let stand for 10 min.
3.  Divide greens among six plates.  Top with blueberry salsa and sprinkle with bacon, seeds, and cheese.

Yummy!  Let’s eat…
