Dill Pickled Asparagus

I know it’s a little early for asparagus, but I saw this bunch at our local store and they looked so good I thought I would get a head start this season.

Don’t they look great!





You will need to wash, drain, and trim asparagus;  cut ends off and toss.  I cut my asparagus in half and pack into jars.  You will need to sterilize your jars and lids prior to use. 
3 1/2 pounds asparagus
1/3 c. canning salt
1tbsp. dill
3 c. water
3 c. vinegar
4 cloves garlic
1/4 tsp. red pepper flakes
1/2 tsp. pepper corns

Mix salt,dill, water, and vinegar into saucepot and bring to boil.  1 clove of garlic, red pepper, and pepper corns into asparagus jars.  Pour hot liquid over asparagus, leaving some headspace.  Place lid and ring on and process for 15 minutes.
Makes about 4 pints



We usually eat ours for a snack or on the side with a sandwich or hamburger.  It’s also great on a snack tray for parties.  Hope you enjoy.
