Cinnamon Toast Muffins

Okay I’m not a morning person…
I do however get up early before the kids do,  but I do not like to make breakfast for them.  If it’s not easy like cold cereal or yogurt and fruit.
  
Forget it!  Is that bad? 
 I like my quiet morning with a big cup of creamy coffee by myself at least an hour before everyone is up and talking a hundred miles and hr. at me or fighting with one another.
It’s my me time.
So I will make breakfast stuff for dinner or make up some stuff the kids can pull out of the freezer and warm up in the microwave.  Easy…

Ingredients:

1 loaf of cinnamon bread (cut into Sm. cubes)
4 eggs beaten
1 C. milk
cinnamon
vanilla
12 ct. muffin tin

Mix eggs, milk, cinn., vanilla together and set aside.  Spray your muffin tin with cooking spray and then start packing your bread cubes into the cups.  You will kind of want to press down on the bread to pack in tight.  Then pour your egg mix over all the bread cubes in the muffin tin.
Caution!  It will be messy…
Cover with foil and let it sit overnight in the fridge.  Pop in a 350 degree oven the next morning for 15 minutes or until golden brown.  Remove foil before cooking.
Serve warm with syrup.
