Carrot Apple Breakfast Cake

I thought I would post this oh so YUMMY breakfast cake today because
Baby it’s Cold Outside!
Our weather here in the desert is so crazy.
Last week it was 70 degrees and today it’s foggy, rainy, and cold.
 Yes, in the desert…
We dress in layers because it will be freezing cold in the morning and hot in the afternoon.  Sometimes it’s a sweater and flip flops in November ~ December.

This cake is so good that I couldn’t even get a picture before the hub’s ate half of the loaf.
I just love how you can see the abundance of bright orange carrots and green apples all through the cake.

Recipe

2C. shredded carrots
1 lg. green apple
2C flour
1C sugar
3/4 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
3 eggs
3/4 C veg. oil
1/2 tsp. ginger
1 tsp. vanilla extract

Preheat oven to 350 degrees Fahrenheit.  Grease loaf pan with cooking spray.
Peel and grate carrots and apple in a bowl and set aside.
In another large bowl, whisk flour, sugar, baking soda, baking powder, salt and cinnamon together.
Whisk eggs, oil, ginger and vanilla in separate bowl.  Fold the wet ingredients and the grated carrot and apple into the flour mix, stirring just until moistened.  Pour batter into prepared pan and bake for 20 ~ 25 minutes our until done.
Sprinkle with cinnamon and sugar while still hot.
If you can, let it cool for 15 minutes.
Enjoy a slice with a nice cup of coffee.

This cake is great to have on Thanksgiving morning as you are waiting for the turkey as the smell fills the house with that wonderful smell.
I hate that part.
I’m so hungry…
Only 3 more days to go and we are going to have an Awesome dinner…
